June 15 - 21 Meal Plan

Remember that time I wrote something like "I am going to send out an email every week" and then I sort of did that for awhile and then skipped sometimes and then magically reappeared in your inbox? This is that time, again.

Anyway, let's start with something I realized today: there may be some of you out there that feel frustrated by the nights when you were planning to cook but life got in the way and now it's another takeout night. I'd like to offer a potential solution to the problem. Always have a box of noodles, butter, maybe a jar of sauce, and parmesan on hand. Even on the most hectic days you can boil some water. If you're gluten-free, they make noodles for you, and I personally doubt they are very good but you could still boil the water and get it done. We eat this pasta "recipe" at least 3x a month.

I'm going to cook extra rice for this recipe for Skillet Chicken and Rice with Peas and Pancetta (ATK) because I'll want leftover cooled rice for fried rice. This is the least annoying Blackstone recipe I could find (people who make recipes for that grill are all part of a cult that requires them to make the most unreasonably click-bait-y recipe posts ever, it is awful). Also I won't be doing the "one dish dinner" version of that ATK recipe because I need my rice separate. Also also I'll save my rant about Internet food people calling anything a "one dish dinner" for another email.

I'm going to continue the chicken and rice theme for the last recipe because I'm trying to behave in regards to our grocery budget. So Arroz Con Pollo it is (Saveur). This version as-written is probably amazing, but here's why Amanda gets annoyed whenever I randomly ask her to get dinner started: I'm using this recipe as a general guide / inspo and I'm not going to use all these ingredients. I'll be buying plenty of boneless chicken already, and I'm lazy, so I'll buy extra thighs for the skillet chicken recipe because I want the fat when I cook more chicken for this recipe. I have most of the spices that make up sazón already in my pantry so I'll approximate that one. Personally, I would eat a plate of pimento-stuffed manzanilla olives with maybe some saltines and call that a meal, but no one else in my family will touch an olive so that is getting nixed. See, now it's a simple recipe!

We watched the new Captain America movie last night and it was really fun. Harrison Ford is the best. Although I'm not 100% sure I remember all the reasons we're just now talking about adamantium being a thing (haven't these characters met Wolverine? how did they make Wolverine if the whole 'celestial mass' thing is the first time these characters are aware of adamantium? maybe there are different...grades? idk) I still enjoyed the movie so go watch it even if you aren't as nerdy as I am.
