March 29 - April 5 Meal Plan

I'm leaving town on Thursday, so this week's plan includes the things I'll cook to leave behind for the fam.

Last week's winner was the Pasta al Limone. I'm not great at cream sauces, but I managed to not curdle this one and it was really delicious. If you skipped that one last time, definitely recommend you try it out. The loser last week was the fridge salad; I just didn't ever get around to making it. Whoops.

  1. Chicken salad, family recipe
  2. Grilled chicken with these carrots
  3. Ground beef quesadillas with rice and beans
  4. Chicken teriyaki with rice and broccoli (I'll use mirin instead of sake fwiw)

Leave Behind Leftovers

These are my two go-to meals for easy cooking or reheating when I'm not here.

  1. Crock pot chicken pasta: cook chicken in a crock pot with most of a jar of Rao's marinara, then boil noodles and grate parmesan over the top
  2. Braised chuck roast with rice or noodles (this recipe from Porter Road butcher is my fav)
