June 1 - 7 Meal Plan

I took the last days of May off from meal planning due to some travel and the fact that our food budget was in danger; we decided we would just eat the food we already had and try to make it interesting. We mostly succeeded in the endeavor but it really wasn't very interesting. And sometimes it was just weird. Here's to a better month of food to launch into summer.

Recipes

I love meatloaf, but Amanda does not. This beef kebab recipe from Saveur feels like grilled meatloaf to me, so I'm going to give it a go. I honestly have no idea if I'll find persimmons, so if I don't I'll probably just put these in a gyro and call it a day.

Amanda loves burrata though, so I'll make up for my likely-to-be-disastrous attempt at grilling ground beef footballs by grilling up some chicken and a foil pack of veggies topped with burrata (Food Network).

I still have some frozen salmon to use up, so it's time for roasting taters and veggies. I'll be loosely following this recipe from Bon Appetit but there's zero shot I'm cooking this all on one sheet. My family barely tolerates fish as it is, so it's basically just rude to soak all the veggies in fish juice to save time on dish washing later. I'll also sub the artichokes for broccolini because I love broccolini with any and all fish.

I've got a couple of chapters left to finish the God of the Garden book, and while the author like trees more than I do (I'm more of a cottage garden guy) I have thoroughly enjoyed it. Great summer read if you're looking for one.
