April 25 - May 2 Meal Plan
Whoops I missed a week. Easter was busy, we ate a bunch of leftovers for longer than they probably should have been consumed, yadda yadda.
I decided my bulleted list situation was feeling too utilitarian and boring, so now I'm going to try a new format because why not. "I've got no strings to hold me down..."
Recipes
This week, I'm cooking a beef chuck roast, in a manner previously linked, and then using the leftovers to make a beefy burrito bowl the next day. Our burrito bowls typically feature bell peppers, rice, black beans, refried beans from a can, cheese, salsa, green onions (in case any of that info is helpful).
I usually use the remaining liquids in the braise to pour over whatever starchy thing we're having alongside the beef; this time I'm going to pour it over couscous because Caroline calls it "goose goose" and that makes me happy. I don't typically reserve the cooking liquid for chuck roast, though some say straining it over the leftovers is the way to go for most braises. I always do that with the Bourdain pork shoulder, which I'll inevitably be cooking again soon and will find a way to share that incredible recipe here.
After the roast / burrito bowl situation, the plan is to cook a chicken the way Ina told me to do during the spring, with many much vegetables.
Steph sent me a screenshot of a good chicken recipe I'll also be using this week, which utilizes some of the herbs I'm attempting to grow on my porch this year. Here ya go:

There are few things more delightfully pretentious than being able to say the dish on the table features herbs "from the garden", so I'll be sure to loudly proclaim that to my children this week to see if they are as impressed as they should be.

Amanda and I have been watching The Chosen on Prime, and I highly recommend it. I think there are some notes I should include though: oftentimes when people are recommending shows that are loosely Christian I assume that I'm going to need to overlook either shoddy acting or terrible production (or both). This isn't BibleMan. OK, I was obsessed with BibleMan as a kid so just...don't...ok? Anyway watch the Chosen show, it's good.
