031025-031525 Meal Plan
I never get around to going to the grocery store when Amanda is out of town, so this week's meal plan starts on a Monday.
It's spring break week for us, so each meal has some aspect my bored children can do with me. And we need some big breakfasts.
I've also decided adding the day of the week here isn't useful, so how about a simple list?
- Skillet chicken and rice with peas and scallions
- Honey mustard pork chops with frozen veggies and buttermilk biscuits
- Sheet-pan chicken and potatoes with lots of lemon (forgot to cook this last week)
- Pasta with cauliflower and bacon
- Breakfast stuff: hashbrown casserole, pancakes, and various breakfast meats
I didn't make any progress with my reading list over the weekend, but I am nearing the end of the Tucci book. It was ok at the beginning, but now I feel like he's hitting his stride towards the last half of the book and blending updates with observations or interesting stories in a way that makes it much more interesting to read. Since I only have a few dozen pages left, I'm trying to refrain from starting another one before this one is over.
If you're on spring break with kiddos this week, I wish you luck and accompany this email with prayers and my encouragement to mix up a very strong drink at the end of each day.
